Job Description

Line Cooks are responsible for making sure that food is prepared to the exact specifications of the establishment, and of the customer. Cooks are encouraged to develop their skill set so that they may diversify their capabilities, becoming more valuable to the overall kitchen. The ideal person is responsible for station set up; preparing his or her station before the start of each shift. The Line Cook will prep food: chopping vegetables, butchering meat, or preparing sauces, dips, etc. This person is responsible for preparing the items requested from his or her station. The Line Cook is responsible for cleaning their station, and may be asked to help other cooks clean up their stations. Job Description

Dishwashers are required to clean pans, pots, dishes, tools, utensils and equipment used in a kitchen or restaurant. They need to operate the dishwashing machine or wash dishes by hand, and maintain a clean and organized dish area. These workers must scrape, sort, stack and load dirty dishes into the dishwashing machine or hand wash them. Once the cleaning operation is complete, unload the dishes and put them in their designated storage areas to be reused again. The Dishwasher also completes general cleaning duties and storing food and non-food supplies.

An Expeditor ensures that all kitchen orders are prepared in a timely manner, according to the menu and customer specifications. An Expeditor may also finalize the presentation of the plate and test the temperature of the food and keep orders flowing from the kitchen to the diners. The Expeditor must call out orders across a line and maintain composure in a loud, hot environment. Expeditor is a fast-paced, high-stress job. This position is responsible for the flow of the line meaning they must receive orders from wait staff, relay them to the kitchen, monitor progress and ensure that the kitchen puts out the dishes according to each ticket’s specifications.
